At Home: Baking with Megan and Eilidh

 

We're SO excited to be coming into baked pudding season (but to be honest, a self-saucing pud shouldn't EVER be limited to just one season).

Acme co-owner, Megan, baked this self-saucing delight in a mixture of the Mini and Medium Tasters. That way, her mini (Eilidh) could have her own perfectly portioned pud. It would make a wonderful weekend/any time pud that the kiddies would be super keen to help with/eat.

Chocolate and Plum Self-Saucing Pudding

The Two Raw Sisters for Acme Cups
Serves: 6
Time: 45 minutes

Cake:
1 cup oat (GF option: buckwheat flour)
1/4 cup cacao powder
1/2 cup coconut sugar
1/3 cup coconut oil, melted
1/2 cup plant-based or dairy milk
1 1/2 tsp baking powder
½ tsp sea salt
6 plums, destoned and roughly chopped or what's in season. Megan used tamarillos.

Sauce:
3/4 cup coconut sugar
3 tbsp cacao powder
1 1/4 cups boiling water

To Serve:
Plant-based or dairy free ice cream or yogurt

Method:

Pre-heat the oven to 190°c.

Add all of the cake ingredients to a bowl and mix until well combined. Divide between 6 Medium Tasters (or 4 Medium and 2 Mini Tasters and smooth the top). Set aside.

For the sauce, in a medium bowl add all of the ingredients and whisk together until smooth and shiny. Slowly pour the sauce over the back of a large metal spoon to cover the pudding.

Place the dish into the oven and cook for 35 minutes.

Serve hot with vanilla ice cream or yogurt.
